MONTEREY MADNESS

Over the next 4 weeks there will be two major produce gatherings in Monterey, California. The first, in the next ten days is the Organic Food Show and at the end of the month the Foodservice PMA is at the same location. Culinary is fortunate to have an office 45 minutes north of the convention facility. While we will not have a booth (those days are past) and will not be attending, we would be happy to have you visit our office or meet with you anywhere in the area you please. Even with complete lack of attendance, we end up runiing around for the week, accommodating our customers’ needs and pitching programs when we can. If you are interested in setting up a meeting around a meal or a drink, or if you like the opportunity to scream at us for a few minutes, Monterey provides a very convenient opportunity. Please contact our Culinary West office at 831-288-0980. Keep the number handy during shows as we will be on hand to support your success in any way we can. Travel safe, looking forward to seeing you, maybe.

POTATO PROBLEMS CALM DOWN

So the bump, burp, blunder settled into a very controlled problem. We had a visit with our potatoes and those who pack them so we could see the problems first hand. First were some communication problems which were quickly resolved. Then we got to see the line in action. Lots of very pretty potatoes but 15% or more were beat by the heat. Now that everything is out of the field and the trouble spots in the potatoes have had time to develop, we can sort with greater confidence. To assure we pack a quality box we are running our potatoes across the line twice. There are about 350 to 400 potatoes in a 50 pound case of fingerlings and as few as 10 potatoes broken down can ruin the whole box. Our crop is going to remain very tight until the last week of July when we will be packing from new fields. A month after that we will be in more new fields. By that time we should be able to once again cover all our customers. Until then we will allocate the best we can in this basically invisible market. We really appreciate your patience and look forward to filling all orders completely as soon as we can. As far as price goes, well…………………………..let’s talk.

NEW PRODUCE QUIZ – – WHO AM I??

Ancient and Asian, I’m larger and more revered than my western counterparts, and my long, white (sometimes green-shouldered), shape distinguishes me from American and European varieties. My earliest existence is documented in archeological remains of northern China; it’s believed that I traveled westward following the path of human migrations. I was introduced to Japan only one thousand years ago and am now the country’s most widely grown vegetable. In England, in the Middle Ages, I was prescribed as a remedy for “woman’s chatter” and depression. Early on, sailors ate me to prevent scurvy and as a remedy for colds. In addition to lots of vitamin C, I have only 10 calories per half cup. Raw, I’m fresh and snappy, with a juicy crispness; I can be sweet and mild to fairly hot and pungent. Peel me like a carrot, cook me like a turnip, grate me or foam me, pickle me, or carve me into decorative shapes. I’m loved in tempura dipping sauces, with sushi, or call me Mooli and cook me in Indian food. You may use my black Spanish relative because he’s the same size and shape, but only I can be gift-wrapped as a token of esteem in Japan.
