Culinary Specialty Produce has been helping shape the fingerling potato market since 1997.
What began with fingerling potato growers in Colorado and Oregon, including farming families
we still work with today, became one of the cornerstones of our business. At the time, fingerling
potatoes were a little-known specialty item. Culinary Specialty Produce saw the potential and
helped turn that potential into a market.
Culinary Specialty Produce developed the original commercial fingerling potato assortment,
bringing together different colors, shapes, sizes, and varieties. Yellow, red and purple fingerlings
gave chefs, retailers, and consumers something new: potatoes with distinctive appearance, rich
flavor, creamy texture, thin skins, and tremendous versatility.
Culinary also helped create markets where none had existed. Jumbo fingerling potatoes, once
sometimes fed to buffalo, became a desirable specialty product. At the other end of the spectrum,
Culinary helped develop the pee-wee fingerling potato market, creating another unique size and
presentation for chefs and retailers.
Culinary Specialty Produce also pioneered the first commercial retail packaging of fingerling
potatoes for grocery stores, helping move fingerlings from specialty foodservice into the produce
department. We created Culinary Harvest, our brand for fingerling potatoes, to give this
emerging category an identity at retail and help consumers recognize what they were buying.
Education was a major part of building the fingerling potato market. For decades, Culinary
Specialty Produce prepared, cooked and sampled fingerling potatoes at national, regional and
corporate food shows, introducing chefs, buyers, retailers, distributors and foodservice
professionals to their flavor, quality, convenience and versatility.
To further develop the category, Culinary Specialty Produce joined with growers and
distributors around the country to establish the Specialty Potato Alliance (SPA), created to
educate the industry and consumers about the flavor, convenience and culinary qualities of
fingerling and specialty potatoes.
Behind the scenes, Culinary Specialty Produce worked with growers in multiple regions to
develop year-round fingerling potato programs with limited seasonal interruption. We established
forward distribution on both coasts, bringing fingerlings closer to our customers and creating
dependable programs for retailers, wholesalers, distributors, repackers, restaurants and
foodservice operators.
From developing the fingerling assortment, creating markets for jumbos and pee-wees,
pioneering commercial retail packaging, creating the Culinary Harvest brand, building year-
round supply and introducing fingerlings at food shows across the country, Culinary Specialty
Produce has played an instrumental role in the growth of the fingerling potato category. Three
decades later, fingerling potatoes remain part of who we are.
